Frozen Recipes

In many classic frozen recipes, you take a combination of sugar, cream and eggs, then blend, and stir over heat. Toss in flavorings, nuts or fruit and freeze it in a tin, mold or ice cream machine to create your frozen concoction. While that may be the classic connotation of a frozen recipe, it but one of many variations for frozen desserts. From baked Alaska to simple frozen fruits in syrup, icy confections are treats year round.

Frozen Recipes... More Than Ice Cream...

The frozen dessert market is booming $4 billion industry and encompasses so much more than ice cream. Consider a taste of some of the other frozen desserts.

  • Sorbet - made with fruit syrups, sometimes egg whites. No milk, beaten until smooth and then frozen. Sorbets should never be rock hard and always free of ice crystals.
  • Sherbet - Similar to a sorbet but often uses egg whites and milk. Considered a low fat alternative to ice cream because it is traditionally made with low fat milk.
  • Frozen Yogurt - Made with yogurt instead of milk. Although it has a smooth and creamy taste it often lacks the full bodied richness of ice cream. Frozen yogurt can hold many add ins such as candy, fruit and nuts. Those seeking a low fat alternative would be wise to read the nutrition label. These treats can be calorie and fat laden. Low fat versions are available.
  • Frozen Custard - Could be considered ice cream’s first cousin. This is a high end treat. Much creamier and smoother than ice cream. Frozen custard contains 10% butterfat as ice cream does, but also 1.4% egg yolk. That accounts for it’s richness.
  • Italian Gelato - Also known as Italian ice cream. Gelato is a frozen concoction made with a lower fat butter cream that has less air pumped into it than traditional ice cream. Fruit based gelatos have no fat at all. Gelatos have a silky texture and are not as firmly frozen as ice cream, which means they tend to melt quicker.
  • Granita - A sweetened frozen mixture with a grainy texture.
  • Tofutti - Extremely health conscious consumers might want to try this dairy free frozen dessert that is made from tofu.

There’s something for everyone in the frozen recipes section. If you want a more portable dessert consider these other ice cold novelties. Popsicles, creamsicles, and ice cream sandwiches come in all shapes, sizes and flavors. Most are available in low fat and low sugar varieties. It’s never too cold for a frozen dessert.
